  • Trayless Dining - Viterbo implemented trayless dining with the 2008-2009 school year.  Although detailed analysis were not performed, the University feels that it has substantially reduced water, sewer consumption and heating cost.
  • Vegetarian and Vegan Dining
  • Trans-Fats - Viterbo fryer oil, pan and grill shortening has been replaced to a Trans-Fat free products in the fall of 2007.  
  • Guidelines for Franchisees - Viterbo does not have any franchisees associated with dining services.

  • Food Donation - Viterbo food donations generally go to Salvation Army, St. Rose Convent and Place of Grace Catholic Worker House.  Items include perishable items remaining before breaks such as Christmas and summer.  Quantities are limited.
  • Recycled Content Napkins - Viterbo has been using recycled content napkins since before the year 2000.
  • Reusable Mug Discounts -  Reusable coffee mugs stay in the hands of the patron, and when they bring them into Frannys Cyber Cafe they receive a 50 cents discount on their next coffee or drink purchase..(actually, the price of a refill rather than a full price, which equals about $.50)  This program began in the spring of 2007.
  • Reusable To-Go Containers - Viterbo has purchased reusable to-go containers.  Students and/or staff can bring a used container either clean or dirty to the dinning hall and they will receive a clean one with their entree in it.  There is no cost to the patron for using these reusable containers.  This program began in March of 2009.
